Gut Loving Dinner: Fiery Sweet Potato Skillet

This recipe is a sneak peak into the 21 Day Gut Reboot starting October 3rd! I love this recipe because you can have it done in about 30 minutes AND do it in one pan if you desire...less dishes sounds like heaven to me!

Fiery Sweet Potato Skillet

What You Need:

  • 1 lb ground beef or ground turkey
  • 1/2 onion diced
  • 3 tablespoons olive oil
  • 2 teaspoons cumin
  • 3 tablespoons chili powder
  • 2 cloves garlic minced
  • 2 cups diced sweet potatoes
  • 1 15 ounce can fire roasted tomatoes
  • 1/4 cup water or chicken broth
  • 1 cup shredded cheddar cheese
  • 4-6 cups cauliflower rice (serve over ½ to 1 cup)
  • Optional toppings: lettuce, avocado, cilantro, green onions, cheese if you can tolerate it

What to do:

  1. In a deep skillet over medium heat, pour 1 tablespoon olive oil, onion, ground beef, 1 tablespoon chili powder, and 2 teaspoons cumin. As the mixture is starting to brown, add the garlic. Cook mixture until beef full cooked.
  2. Once beef mixture done, pour onto a plate. Place skillet back on the stove and add 1 tablespoon olive oil, sweet potatoes, fire roasted tomatoes, 2 tablespoons chili powder, and 1/4 cup water or broth. Cover mixture and cook on medium heat until potatoes are soft (about 20 minutes).
  3. Once potatoes are soft, add the beef mixture to the skillet and mix it all together! I like to sprinkle a little chili powder and drizzle olive oil over the mixture THEN top with cheese, remove from heat and cover until cheese is melted.
  4. Let the mixture cool and divide into 4 glass containers. Enjoy within 7 days!
