Gut Boosting Breakfast: Blueberry Chia Seed Pudding

Why is this a gut boosting recipe?!

We have chia seeds which help sooth and heal your intestinal lining and is a great source of fiber! Coconut milk has electrolytes and is a healthy fat which helps boost hydration for your digestion to help you have bowel movements! We have blueberries for fiber of course plus it is a great prebiotic and anti-inflammatory to boost your gut health! And finally almonds which act as a prebiotic as well to feed the good gut bacteria in your gut!

If that list doesn’t have you convinced to give this recipe a shot, I don’t know what will! Power, protein packed, gut happy recipe coming in HOT!

What you need:

  • 1 cup coconut milk (I prefer light coconut milk from a can!)
  • 4 tablespoon chia seeds
  • Blueberries
  • 1 tablespoon peanut or almond butter (watch the sugars)
  • Raw, unsalted almond
  • Optional: a drizzle of maple syrup or honey to sweeten it

What to do:

  1. In a mason jar, pour in the coconut milk and chia seeds. Mix well and let sit for at least 2 hours for the chia seeds to absorb (you can do this overnight as well, it will last up to 5 days in the fridge).
  2. Once set, add your toppings: almonds, nut butter of choice and blueberries! **If you use frozen blueberries, heat up in the microwave for a few seconds, mush up and create a nice blueberry mix for the chia seed pudding!
